Arancini are a popular snack and street food from Sicily and in today’s episode, Ninni shares her recipe for them. We're spelling arancini with an 'I' at the end - over on the Palermo side of Sicily, the ending is 'e' and I will leave it to Sicilians to discuss this! Enjoy and happy weekend! . . . #pasta #pastagrannies #arancini #arancine #sicily #streetfood #rice
I am interrupting our nonne with a grandmother from the Karoo in South Africa, Poppie Van As, who makes and sells ’roosterbrood’ or grilled bread, from a stall opposite the petrol station in Laingsburg. She is coming to Italy at the end of September to cook for a cycling event in Liguria (it’s a long story! ) but wants to discover more about Italian bread, pizza, focaccia. She’s also visiting Rome, Florence, Gaiole and Venice Can you help? Contact @don_lebon or @poppievanas for more info
Pasta alla Norma is a classic Sicilian dish that can be found all over the world, made in many different ways. This week’s video stars Graziella who shows us her traditional method. The dish relies on the best ingredients you can get your hands on - tomatoes, aubergines, basil, good olive oil and ricotta salata - that give amazing flavour to Graziella’s hand rolled tagghiarini. Head to our YouTube to watch it now and give it a try for dinner tonight 😊. . . . #pastagrannies #pasta #pastallanorma #aubergine #eggplant #tomatoes #sicily

95 year old Cesaria making lorighittas; I love her precision. Each ring must be dried as an oval and she places them, not quite touching each other, in orderly rows. This was a photo session for the book and it took place in her other kitchen- where all the hard work happens. The copper sulphate blue walls are wonderful. #pastagrannies #pastagranniesbook #lorighittas #sardegna
This is Paulina Fenudi with some of her sos cannisones. The village where she lives, Ula Tirso in Sardinia, has a sagra or food festival celebrating this pasta on 24 August. It should be a fun party with lots of accordion music! #pastagrannies #soscannisones #sardinia #italiancooking
Lina’s episode is now on the Pasta Grannies YouTube channel; she’s a nonna-chef who combines the traditional with the modern. In this case, taccuna pasta made with Rossello flour served with Atlantic bonito. Her restaurant in Marzamemi has a terrace where you can dip your toes in the waves, it’s wonderful. #pastagrannies #taccunapasta #sicilianfood
89 year old Maria making raschiatelli in her bakery. I was looking for a photo of Margherita and her cavati to remind you to watch her video over on YouTube, but that can wait until tomorrow! Maria’s bakery is called Panificio di Virgilio Giovanni and the street is Corso Umberto I, 141 #pastagrannies #raschiatelli #italiancooking
Sunday evening and I am going through photos. This is one I took of Rosa making paglia e fieno or straw and hay pasta for PG book photographer @emma27lee , who had a gremlin in her photo processing software. Rosa, most concerned with the waves of anxiety coming from Emma, prescribed a glass of wine. I don’t remember if Emma took a swig but the gremlin eventually departed and Rosa continued her beaming way through the recipe 😀 #pastagranniesbook #pastagrannies #pagliaefieno
@thesheiladillon tracked me down to ask a few questions about Pasta Grannies for her BBC Radio 4 The Food Programme on ‘what’s so special about grandmothers cooking’ you can hear the full podcast from Monday (tomorrow )
93 year old Peppa - even more full of vim having had a pacemaker since we last saw her. We had to refilm her because I managed to loose her footage (it still hurts to think about ) but every cloud has a silver lining. We gave her a copy of the FT mag she appeared in - and she was thrilled. #pastagrannies #ontheroad #pici
97 year old Giuseppa mixing her dough in the same way as she has always done for nearly 90 years. Just sorting out the 100s of photos I take - you cannot see the twinkle in her eye, but I love how she is so tiny it’s easy to take a photo of all of her. #pastagrannies #pastagranniesbook

Busiate are corkscrew shaped pasta from the Trapani area in Sicily, and the classic dressing is a tomato, almond and pine nut pesto. This is one of my favourite summer pasta dishes and farmer Angela from Salemi shares her recipe in this week’s episode. She uses her family's own heritage wheat flour to make the pasta from @caradonna_azienda_agricola Enjoy!
Back when the @pastamartelli family gave us a tour of their spaghetti factory. No one waits when sausage carbonara is on the table...
We’re in Tuscany in this week’s episode, at La Vialla - an organic agriturismo near Arezzo where they grow their own heritage wheat that is stone ground into flour for pasta and bread. Pici is the dish of the day and nonna Luigina shows us how to make it, along with salsa Etrusca (a flavoursome sauce using store cupboard ingredients ). Watch the video and find her recipe on our YouTube now - it’s a fun one to get the whole family involved.
